Please don’t ask me how to pronounce that, I have no clue. But when I was looking for ideas as to what to pour my new favorite sauce the spicy black bean sauce over, this combination intrigued me the most. My usual go-to is chicken, but I thought I would try pork for this one, and some veggies, for a little variety. And oh my, I was not disappointed.
I found this pack of udon noodles at Costco in Cancun (don’t you feel sorry for me? I have to drive an hour to get to a Costco). There are six individual sized packs that simply need a few minutes steamed or tossed with some oil and they are ready to go. I used the whole package for this meal because I didn’t want to make the same mistake as last time and making only enough for the husband.
Really, once the sauce is made, you just need to fry up your veggies, pork, and noodles and toss the re-warmed sauce over top this, to your liking. We like things pretty saucy around here, but that part is all up to you.
I would gladly say you can put any veggie you like in here, some of the recipes I’ve found have chopped green cabbage and potatoes, but I just used my favorites, red pepper, zucchini, and onion. But feel free to mix it up as you wish.
If you have leftovers (not sure why you would), you may have to add a bit more sauce to it when you eat it the next day, as you know how noodles seem to soak up sauces.
- 1 1/2 lbs pork, cut in bite sized pieces
- 1 small onion, chopped
- 1 small zucchini, cut in bite sized pieces
- 1 red pepper, cut in bite sized pieces
- 2 Tab cooking oil
- udon noodles
- spicy black bean sauce (recipe here)
Heat medium sized skillet with oil. Add pork and cook, stirring, for a few minutes before adding onion, zucchini, and red pepper. Cook vegetables until they retain a bite. Add warmed spicy black bean sauce and udon noodles. Stir well to combine. Serve immediately.
